Ros is a ThermoFun Club Member and shares with us her Thermomix Corned Beef Silverside with Parsley Sauce. This recipe sounds too delicious!!!

Here is Ros's story about the Silverside with Parsley Sauce:

"Silverside is one of my husbands Top 5 favourite meals. It is (was) one of my Bottom 2 favourite meals! I had been reading people were having a lot of success cooking it in their Thermomix. As we had been married for nearly 24 years and I had NEVER cooked silverside in all those years I thought “how wrong can all those people be” and “I have never had a horrible meal from my thermomix” not to mention “how hard can it possibly be?”

So I bit the bullet, followed the recipe to a “T” and Oh My Goodness – I was converted and my husband thought he was in heaven!I can’t tell you how yummy this meal is. All those people were right, it wasn’t horrible and it was SO easy. Ican’t take the credit for the recipe – I found it on www.forumthermomix.com
Please give this a go. It seriously is ridiculously easy and is great in sandwiches for school or work."

Silverside/Corned Beef & Parsley Sauce - ThermoFun

Thermomix Corned Beef Silverside ThermoFun | Thermomix Recipes & Tip (2)

Ingredients

    Parsley Sauce - (makes 2 cups)

    • handful parsley, fresh
    • 50g butter, cubed
    • 25g plain flour
    • 420g milk (full cream or lite)
    • 45g seeded mustard
    • salt and pepper, to taste

    Silverside

    • 1.5 - 2kg piece corned beef
    • 1500g boiling water from kettle
    • 5 whole cloves
    • 3 bay leaves
    • 100g apple cider vinegar
    • pepper, to taste
    • choice of vegetables

    Instructions

      Parsley Sauce

      1. Place parsley into TM bowl and chop 3 sec / speed 8. Set aside.
      2. Place butter and flour into TM bowl and chop 4 sec / speed 5.
      3. Cook 5 mins / Varoma / speed 2.
      4. Add remaining ingredients, including parsley and cook 8 mins / 100°C / speed 3.
      5. Pour into a microwave-safe jug and cover with glad wrap. Make sure the glad wrap is touching the surface of the sauce – this will ensure a ‘skin’ does not form. Set jug aside.
        No need to wash TM bowl.

      Silverside

      1. Spray Varoma deep dish with oil (this will ensure the meat does not stick).
      2. Remove meat from packaging and rinse well under cold water. Dry it with paper towels and place into Varoma dish.

      4. Add remaining ingredients into TM bowl and place assembled Varoma on top.
      5. Cook for 1.5 hours / Varoma / speed 2.
      6. In the meantime prepare vegetables. They need to be peeled and chopped. eg: potato, sweet potato, pumpkin, carrot, cauliflower – whatever takes your fancy.
      7. When 1.5 hours cooking time has finished, add vegetables. You can see from the photos how I normally arrange mine.

      9. Check the water level in TM bowl and refill with boiling water to the 1 litre mark. Add simmering basket into TM bowl. Place Varoma back in position and cook for a further 30 mins / Varoma / speed 2.
      10. Don’t forget to reheat your Parsley Sauce and you’re done!! Told you it was easy!!!

        Guess what?
        i keep coming back to this simple and very easy recipe. It is always handy to have a silverside in the fridge for those days when you are just too busy or too drained to make anything that requires a lot of prep work

        I had never cooked corned beef before trying this thermomix recipe and I have to say I was blown away by just how delicious it was. The meat and vegetables were cooked just right and the sauce was incredible. My Step-father who loves corned beef, commented that it was the best he had tasted.

        Hi, I just saw your note about the error code. Has that happened often with TM5's?

        Last time I cooked this recipe that code came up, and I got my machine serviced. I'm making it again right now. Do you think I should stop? Is the code likely to come again?

          Hi Kylee, Sorry for the delay but I would think that if you have had it serviced for the code that it would be highly unlikely to happen again - but that being said it might - I know I'm no help. Unfortunately I really don't know and suggest you do what your manual suggests or perhaps call the service centre for clarification.

        Hi I'm new to the whole thermomix thing and want to make this ! I'm slightly confused does 5 whole cloves mean 5 whole cloves of garlic and does this go into the bowl as in the jug or with the meat ?

          Hi Stacey, welcome to Thermomix world! :) The whole cloves are not garlic but a very flavoursome spice - they can be found in the herb and spice section in your supermarket. Yes water, cloves, bayleaves, ACV and pepper all go in the TM bowl (also known as 'jug') and the meat in the varoma on top. I hope this makes sense! Enjoy! :)

        Do the vege go in the meat basket or in the basket IN the thermie?? Steamed or boiled?

          Emma it really depends how big your silverside is. If you have room around the meat you can put veg there and/or you can add them to the simmering basket.

        I made this a week ago & it definitely was beautiful & easy to do however we found the meat on the dry side (over-cooked?) especially my niece who didn't try/eat the sauce. Did I overcook it for it to be dry? Or any other tips? Was thinking maybe I should have checked it &/or taken it out after the 90 mins & just left the veggies to cook by themselves? TIA

          It sounds like it was probably over cooked. Silversides do vary a lot in size so perhaps yours was on the small side?

        how long should I cook this for if I only use 0.5-1kg of silverside? Only two of us here so need smaller quantities.

          Talisha I would guess at 1.5 hours. Best way to check though is if you have a meat thermometer to check it is cooked properly. I hope you both enjoy it. :)

        I made this last night for a very fussy crew, and it was lovely! You know it is a hit when the husband and kids are fighting over the last of the sauce to dip their potatoes in! I left the mustard out, as 4 of the 8 I was feeding hate it, and the sauce was still beautiful. Great recipe!

        I didn't believe it would be a flavoursome as slow cooker but it was yummy. Making for the second time today and the water dropped a fair bit in the main bowl in the first hour so I topped it up. Is that ok?

        This recipe is just so AWESOME - the silverside has never been so tender :D
        Been making this at least once a fortnight over winter, & using the left over to make Shepperds Pie (substituting the silverside for lamb... Yes OK it's cottage pie, but I use a thermo SP recipe & bake it in a flan with short crust pastry)!
        The only time the Silversde didn't work was when the meat was just over 2kg. Tip: stick to around 1.6 kg :D Also just got the new Bimbi TM5 & it doesn't bounce around like the old one did! Bonus :D

        Made this tonight for the first time and the meat was very soft and flavourful. I had about a 1.5kg price of silverside and cooked it for the total of 2.5 hours. I will definitely be making it again.
        Made the parsley sauce and wasn't fussed with the addition of the mustard and I'd leave it out in future. But each to their own I suppose.

        This was our first time trying silverside in the thermomix and unfortunately I think we will be sticking with the slow cooker. Same brand we always buy and it was so tough done in the thermo.

        First time ever that there was left overs. Normally the kids eat every little bit.

        We also found the sauce a bit bland and floury. Tho i guess its just personal taste.

        This was just the way I hoped it would be! Thanks for sharing. I made half the quantity of white sauce because I didn't think the kids would go for it but they loved it! Used a 1.2kg piece of silverside so 2 hours was plenty. Looking forward to doing it again soon.

        Just took our corned beef from the veroma and it is beautiful.

        made the parsley sauce as well and the two were made for each other.

        till now always cooked our corned beef in our Dream Pot but now it has a great competator - the Veroma

          Oh Sharlene, You HAVE to try it in the Thermomix - It is VERY simple and I believe so much nicer than the slow cooker! Were you able to get on the Cook Along for July.         This recipe is delicious and I now only do my silverside in the Thermomix
        The whole family love it and i have passed it on to various people. The sauce is
        also great and that extra five minutes cooking the butter and flour certainly makes a difference

        Hi, I tried the silverside in thermo the other day, it was so good, I will definitely be cooking again, the only thing I had to change was from speed 3 to speed 2 because my machine got the wobbles, but otherwise was just perfect.

        I am anxious to try the above recipe but was wondering could you substitute almond milk or any other one to make it a non dairy recipe??? Do you think it would work and still taste ok???         Thanks for the recipe Ros. I made this tonight & it turned out perfect. I had silverbeet for the greens & just added that when I took the meat out to rest & let the veggies finish off cooking the the last 5 minutes.
