There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

Considerations to Prep Sweet Potatoes for Boiling

When you decide to boil sweet potatoes, be mindful of the spuds you buy, as well as how you store them.

  • Shop for sweet potatoes with smooth skin that is firm when you press it, and avoid any soft spots.
  • Store them in a cool, dry place for up to one week, and avoid refrigerating them because they will dry out.
  • If you're making mashed sweet potatoes, it's best to chop the potatoes instead of boiling them whole because it will save you time.
  • If you opt to cut your sweet potatoes, cut them into similarly sized chunks or cubes so they will cook evenly. Potatoes cut into small pieces will take less time to cook.
