I’m always looking for yellow squash recipes.

Yellow squash are pretty much the equivalent of zucchini; if you grow one, then you grow 100. And no matter how many different summer squash recipes I make, pan roasted summer squash is my favorite recipe.

Actually I love roasting all veggies. Roasted Cauliflower, Acorn Squash Slices, Whole Carrots, Spicy Zucchiniare some of my favorites and I always fall back to roasting vegetables as my go-to.

The roasting process brings out the natural sugars which lead to a sweet flavor, and this recipe is no exception.

I’ve got my process for roasting any type of vegetable down to a science.

How to roast any vegetable?

Follow these easy steps when roasting your favorite vegetable including carrots, zucchini. asparagus, squash, potatoes, peppers, green beans and more!

  1. Preheat oven to 425 degrees F, which is the perfect roasting temperature.
  2. Start with more veggies than you think you need. The water evaporates and the veggies shrink.
  3. Use a healthy amount of olive oil (or coconut or avocado oil).
  4. Sprinkle generously with Sea salt (or Pink Himalayan) and black pepper.
  5. Roast until veggies are partially golden brown (the color of caramelization and sweetness).
