Tips for the roasted parmesan Brussels sprouts

This Brussels sprouts recipe is super easy and versatile. Here are a few tips to make it even better!

  • Make sure to cut the Brussels sprouts into even pieces to achieve a similar texture.
  • For a nice golden sear, turn the Brussels sprouts cut side down on the sheet pan.
  • Make sure your oven is at the right temperature for at least 5 to 10 minutes before putting the sheet pan in. This will help to lightly sear the outside of the Brussels sprouts and get the insides soft.
  • Feel free to add more parmesan to the Brussels sprouts.
  • To make this side dish more substantial you can add chopped bacon to the Brussels sprouts. Other nice add-ins might be sweet potato cubes, quartered onions, whole garlic cloves…

How to prepare Brussels sprouts for roasting?

When shopping for Brussels sprouts at your favorite grocery store, look for firm, bright green heads with tightly packed leaves. Go for larger Brussels sprouts when you can choose. Before trimming, wash your Brussels sprouts to remove any dirt. Stem and halve the Brussels sprouts using a sharp knife. If you have some sprouts that are very large compared to others, cut them into quarters, but try to keep them at the same size as much as possible.

How to Cook Brussels Sprouts

Making perfect, crispy roasted brussels sprouts is easy! Here’s what you need to do:

Before trimming, wash your Brussels sprouts to remove any dirt.

Chop the Brussels sprouts. Remove any yellow or damaged leaves, and cut each Brussels sprout in half. Leaving smaller ones whole. Aim for all your veggies to be a similar size so that they cook evenly.

Pat the Brussels sprouts dry with paper towels and place them in a large bowl. Next, season the sprouts. Toss them with olive oil Italian seasoning, garlic, Parmesan, salt, and pepper. Transfer them to a baking sheet, and arrange them in an even layer with their cut sides facing down. This way, you’ll get a nice browning on the cut sides of the sprouts.
Transfer the sheet pan to a 400ºF (200ºC) oven and bake for 2o to 30 minutes, until the veggies are tender and golden brown around the edges. Enjoy!

What to serve with roasted Brussels sprouts?

These roasted parmesan Brussels sprouts are delicious served with any type of meat and fish: chicken, pork chops, salmon, grilled beef…

How and how long to store the roasted Brussels sprouts

I completed this recipe in about 20 mins, start to finish. I pressure cooked my BS in my German stove top pressure cooker, heats up my 1.5 inch's of water in the bottom in about 3 mins. super fast (Fissler brand). Cooked for 8 mins., but next time I will only pressure cook for 4-5 mins. Do a quick release of the steam, then poured the mixed up ingredients, altering amounts slightly to my preference, added more Pharm. and broiled long enough to crisp up Pharm. cheese 3-4 mins. Oh, I also grated my Pharm. cheese in my Vitamix. Cut into chunks, takes a nano second and no danger of grading off my skin. The reason I said 20 mins is I included the initial processing of the BS. I also made a 2lb bag which I consumed about 3/4 of the finished product. Yummy for sure!

1st off...I want to say that I never leave reviews (but I always read them so shame on me!) I read the recipe and chose to cook these cut side down, AND if I noticed that the cut side was low on cheese, I placed some down first, and then put the cut side of the sprout on top of it. My 11 year old flipped out about how good these were and even got a second helping when I wasn't looking! Highly recommend this one!

I made this last night as it was designed, written. First, I don't really like Brussel sprouts, but I was looking for a great recipe. This was great, Brussel sprouts are very healthy. Still had a little of that taste. I made flounder for dinner, with lemons on top. I looked at the cooked lemons and decided to try some on the sprouts. That was my answer to great Brussel sprouts. I don't know if that can be added prior. Next time I'll try it on half the batch. Maybe I'm getting older and liking more types of food!

FAQs

Is it better to roast brussel sprouts whole or cut in half? ›

Is it okay to eat Brussels sprouts every day? ›

With all of these benefits, you may be wondering if it's okay to eat Brussels sprouts every single day. Rifkin's expert opinion is that it's safe to do so, but you also want to make sure you're eating other nutrient-rich foods too.

Why do you soak brussel sprouts before cooking? ›

The soak time tenderizes the sprouts so the middles are softer. Don't worry, they won't be soggy! I would never do that to you. If, like me, you don't mind some chew to your sprouts, you don't need to soak the Brussels sprouts prior to cooking.

Why won't my Brussels sprouts get crispy? ›

Not using enough oil.

The other secret to ridiculously crispy Brussels sprouts is tossing them in plenty of oil. We like to use olive oil, but plain vegetable oil is great too. If the sprouts are well-coated, they'll caramelize and char instead of simply softening in the oven.

How do you keep roasted Brussels sprouts from getting soggy? ›

The baking sheet must have room for the Brussels sprouts to be spread out. If they are crowded they steam instead of roasting. Cut a tiny slice off the bottom of each sprout, then cut them in half lengthwise. Toss them in olive oil and Kosher salt.

When should you not eat brussel sprouts? ›

Throw out fresh brussel sprouts that have a foul odor, yellow or wilted leaves, a mushy or slimy texture, or dark spots. Use fresh brussel sprouts within 1–2 weeks of getting them. Store the brussel sprouts in a plastic bag inside your fridge, and wash them before cooking them.

What is one major side effect of eating Brussels sprouts? ›

What's healthier, broccoli or Brussels sprouts? ›

While broccoli may have a higher count of calories, fat, and carbs, it is richer in calcium, iron, and pantothenic acid (a B vitamin that does wonders for healthy hair), and has a bit more potassium. Brussels sprouts, on the other hand, are lower in sodium.

Should Brussels sprouts be boiled before roasting? ›

Unlike other vegetables, Brussels sprouts can be parboiled (even a day ahead) to reduce the roasting time without hurting their texture. That means the sprouts can be popped in the oven while the meat is resting before carving. Of course, if the main course is grilled or pan-cooked, the oven will be free for roasting.

Should you cut Brussels sprouts in half before cooking? ›

One of the most common ways to cut a Brussels sprout is in half or quarters. By doing so, you reduce the size of the sprouts, speeding up cooking.

Is it better to cut brussel sprouts before roasting? ›

Should brussel sprouts be halved or quartered? ›

Halve, quarter or shred sprouts to minimise the cooking time. If the sprouts are larger than average and you want them to remain whole, you can of course cook them for longer. They will probably need 7-8 minutes to cook through. Don't cut a cross in the base of your sprouts.
