I intentionally played like a potato to demonstrate how easy it is to take down enemies that tend to give new players trouble. For example, groups of forged and multiple veteran hydras at once. All while standing in place like I'm rooted and spamming 1 and dodge. It really is easy and quite difficult to die even against many champions.
Edit: You don't need celestial or trailblazer to make staff mirage work for open world. They would probably be the better options, but anything condi will work, preferrably something tanky like Dire.

I did watch the video, I also tested it out myself. The build is a bit more involved than you claim it to be. Plus as others have mentioned, suggesting an elite specialization is a bit of a stretch from the start...
That said... you're alternative class suggestion of Necromancer does actually hit on a solid easy build... Running with all minions, spec Death, Blood, & Curses... Take Flesh of the Master, & Necromantic Corruption in the death trait line to make your minions bolster your defense, the final trait in Death can be any of the three options, though Death Nova will greatly improve your offensive capabilities as well as potential of getting up to another 10 stacks of Carapace for even more defense... you can take Unholy Sanctuary to instantly enter Death Shroud if you take a Lethal Blow if you would prefer a solid safety net as opposed to the benefits of Death Nova. From Blood running with Blood Bond, Vampiric Presence, & Blood Bank will cause you to constantly Heal as you attack, and generate Barrier from all of your healing sources. In the Curses trait line the only trait of any importance is Parasitic Contagion for even more healing, the rest of your choices are up to your personal preference, though Insidious Disruption + Terror do make a potent combination for feeding more condition damage into Parasitic Contagion. Scepter is the ideal main-hand weapon for this due to the auto attack generating crazy amount of Bleed as well as stacking Poison... Off-hand weapon choice is really preferential, personally I like Focus, but Dagger will give you an extra source of Bleed and Warhorn can be a good option too with it's life siphon and daze.
The build can easily transition into Reaper or Scourge by replacing Curses with the elite spec. With Reaper you build for Chill and & grab a Focus as offhand purely for Spinal Shivers. The trade off for going into Reaper is that you lose some of the suitability granted by Curses to greatly improve your offensive capabilities, though the loss is honestly rather insignificant when compared to the survival you get from Death & Blood... With Scourge, you build for Barriers becoming a more support oriented build.
This build, regardless of if you go Core Necro, Reaper, or Scourge; can easily have you sitting at full HP with ~5000 Barrier (or more) at all times just by spamming your Auto Attack... The sheer number of Minions you have out at all times gives you a massive amount of Toughness letting you basically shrug off most attacks, and what you can't shrug off is generally absorbed by your practically limitless Barrier. Incoming Conditions just get transferred to your minions and then sent back out to your targets... and despite being AI, Necromancer Minions can actually do some respectable damage.
